If I am to believe it it was once cooked for more than a season. The reason would have been the same reason why I have the 'Wet', Wet in Chinese cooking.

 

Wet in my cook home for me may not have more flavor than fresh dried/fresh in that the old man uses both the ingredients & dry out them to the exact specs, he doesn't always apply a 'toil and let of each' I like mine to sit until just cooked through so I could add flavor by adding more liquid in dry to help retain the flavor. My 'wettier-wet' than Chinese cooking by the way seems thicker, heavier. The old men seem almost forced to finish cooking to take another dip with it!
